Best Carrot Cake recipe

Carrot cake is a classic dessert that is loved by many for its moist texture, warm spices, and sweet cream cheese frosting. It’s the perfect treat for any occasion, from birthdays to holidays and everything in between. While there are many different versions of carrot cake out there, this recipe is my personal favorite. It’s easy to make, incredibly flavorful, and always a crowd-pleaser.


For the cake:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 4 large eggs
  • 1 1/4 cups vegetable oil
  • 1 cup granulated sugar
  • 1 cup light brown sugar, packed
  • 2 teaspoons pure vanilla extract
  • 3 cups grated carrots (about 1 pound)

For the frosting:

  • 8 ounces cream cheese, at room temperature
  • 1/2 cup unsalted butter, at room temperature
  • 4 cups powdered sugar, sifted
  • 2 teaspoons pure vanilla extract


  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, cloves, and salt until well combined.
  3. In a large bowl, beat the eggs

with an electric mixer on medium speed until frothy. Add the vegetable oil, granulated sugar, brown sugar, and vanilla extract and beat until well combined.

  1. Gradually add the dry ingredients to the wet ingredients, beating on low speed until just combined. Stir in the grated carrots until evenly distributed throughout the batter.
  2. Divide the batter evenly between the prepared cake pans and smooth the tops with a spatula.
  3. Bake for 30-35 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
  4. Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then, remove the cakes from the pans and place them on a wire rack to cool completely.
  5. While the cakes are cooling, prepare the frosting. In a large bowl, beat the cream cheese and butter together with an electric mixer on medium speed until smooth and creamy.
  6. Gradually add the powdered sugar, one cup at a time, beating on low speed until the frosting is smooth and well combined. Add the vanilla extract and beat until the frosting is light and fluffy.
  7. To assemble the cake, place one cake layer on a serving plate and spread a layer of frosting on top. Place the second cake layer on top of the frosting and spread another layer of frosting on top of the cake. Spread the remaining frosting around the sides of the cake until it is evenly coated.
  8. If desired, decorate the cake with chopped nuts, shredded coconut, or fresh berries.
  9. Chill the cake in the refrigerator for at least 30 minutes before slicing and serving.
